Cheaters Beef Hotpot

When you are feeling down, I find that I shrink away from the world and I shrink away from the things I love. Many of the things that I enjoyed before seem now to be a chore and it takes a lot of effort to do even the most simple of tasks. Cooking started seeming like a daunting task and I found myself reaching for the quick and easy meals out of the freezer, rather than cooking.

At the end of the day Robyn was fed and I made sure she still had her portions of fruit and veggies, even if I beat myself up for not being as healthy as I could be.

Today was the first day that I have felt up to cooking for a while so I decided to make something hearty and warming. Beef hotpot! I did cheat a little though by using tinned veg, but it still made a quick and tasty meal.

Robyn really seemed to enjoy picking out the individual veggies from this dish, allowing her to explore the different tastes and textures.

Ingredients:

  • Mince beef
  • Onipn
  • Tinned sweet corn
  • Tinned peas
  • Tinned tomatoes
  • Tinned carrots
  • Low salt/ salt free Stock cube
  • Worcester Sauce
  • Your choice of herbs (I used garlic, onion powder, rosemary, parsley, sage)
  • A little flour
  • Potato
  • Oil

How to make:

  1. Brown mince using a little of the oil.
  2. Add chopped onions and continue to fry until onions begin to caramelise
  3. Add tinned veg (including water from tins)
  4. Add stock and herbs
  5. Mix then allow to simmer
  6. Cut potatoes into slices, add to a bowl with a dash of oil, cover then shake until coated in oil
  7. Check meat and veg mix, if it still seems too watery, add 2 tbsp flour to a little water and mix until dissolved. Add to mix and stir until desired thickness.
  8. Place sliced potatoes on top of mixture then place in a preheated oven for 30 mins or until potatoes have browned
